I’ve had a a bit of a scone obsession lately... I’ve had a a bit of a scone obsession lately... GLUTEN-FREE SCONES
3 c. Almond flour
2/3 c. Tapioca flour
1/3 c. sugar
1/2 t. salt
1 T. Baking powder
1 t. vanilla
2 eggs
1/4 c. coconut milk from the can
1 stick butter, chilled and cubed
Filling- chocolate chips, blueberries, raspberries (optional)

Mix the dry ingredients. Then add the wet ingredients and butter. Use your hands to knead the dough and work in the butter. It’s okay to be a little streaky from the butter. Fold in your filling of choice. On a cutting board shape the dough into a 6-8 inch disc. Cut into 8 wedges. Bake at 350 for 25 minutes on a parchment paper covered baking pan.

Back when I was getting severe hives I went on ano Back when I was getting severe hives I went on another binge through our house to get rid of anything that was potentially causing irritation. Our home was basically already chemical free, but I went through and did another clear out of essential oils and ‘natural’ products that had a lot of ingredients. One of the main things I got rid of was our laundry detergent, even though it was a good brand it still had a lot of ingredients, including lavender. Lavender is a common irritant and I felt that it might be for me. I started making my own detergent because I knew exactly what was in it. Also, turns out it works way better than what I was using. Our clothes feel cleaner than ever. Not to mention how much cuter the storage method is. :) Every few months I make a few batches and fill this glass container. It’s kind of a fun little experiment and would be great for kids too! 
HOMEMADE LAUNDRY SOAP (for high efficiency washers)
2 cups white vinegar
2 cups washing soda
2 cups baking soda
1/2 Dr. Bronners soap (I use unscented)
In a bowl mix the washing soda, baking soda, and Dr. Bronners. Slowly add the vinegar and keep mixing. It will end up in a dry/clumpy powder. It is important to keep mixing and not let it sit. Use 1/2 cup per load.
I once watched grown men chase geese across a park I once watched grown men chase geese across a park. In the same park I watched adults stop to let the kids out, so they could chase the geese, get back in the car and then drive away. Today I watched two children chase our neighborhood ducks across my neighbors yard. Last week, one of the those ducks was resting on the warm pavement in front of my house. I went outside and gently shooed it away, so it didn’t get run over by the car that sped through a few minutes later.  The same ducks were wandering around our front lawn when we got back from a walk. We simply let them peck the rug and then wander away as they pleased. When I see geese in the park, I purposefully go further around as not to disturb them. The disconnect between these few actions infuriates and saddens me. What gives you the right to chase wild animals? Why do parents allow and enforce that it is okay to treat animals this way? Why is it funny to chase and scream at wild animals? In my opinion, you look ridiculous. How would you feel if you were peacefully hanging out under a tree in my front yard and I started running at you, waving my arms and yelling for no apparent reason? I think it sounds scaring, jolting, and would take away my trust in you. 
Theses moments that I’ve witnessed have stuck in my head. They are frustrating. I feel some anger towards those people and want to give them a piece of my mind. Then I remember that most likely nobody ever taught them to appreciate nature. That they haven’t been taught that animals should be treated equally and respectfully. That animals were here long before us and we are the invaders. Also, that even more than not being taught respect and appreciation for nature...whether directly or indirectly someone taught them the exact opposite. 
We just celebrated Earth Day and just the same as we need to take care of our plants, trees, and protect our air and oceans...the animals need us to take care of them too.
